Pizza upstairs, art downstairs
Knack & Snack opened in 2025 as a pizzeria with an art gallery on the lower floor. The workshops happen right there: between the works of the current show, at a long table, with the oven that serves the restaurant every night.
The story
Behind Knack & Snack are Silia and Spilios, two people with different starting points and the same idea: a place that brings together taste, art and people. They didn’t want just another restaurant; they built a room that changes shape through the week — exhibitions, stand-up, workshops, pop-ups.
The pizza is authentic Neapolitan: 72-hour dough, everything by hand, ingredients chosen with care. The pizzas are named after art movements, because every pizza has its own character.
The dough
Type 00 flour, water, salt, very little yeast and 72 hours of patience. In the class you learn why slow fermentation gives the cornicione its puff, and how to get close to it in a home oven.
The people
The instructors are the same pizzaioli who work the oven at night. They speak Greek and English, and they let you make mistakes: the second dough ball is always the good one.
